In the production of Hardaliye, which is aimed to be transformed into a 'National Beverage' with the Kırklareli patent, mostly papazkarası grapes are preferred.
First, the grapes are crushed just enough to break the skin (to make the color darker). Then, in order to prevent the must from turning into wine or vinegar, the mustard is crushed enough to crack the skin and placed in oak barrels or earthen cubes between layers of leaves in the form of a layer of grapes and a layer of cherry leaves. Hardaliye becomes drinkable within 15-20 days after boiling period. Hardaliye, which is filtered to get rid of its residue, is purified from its must by opening the taps of the barrels. The water added to the barrel at the end reduces the bitterness of the mustard. Hardaliye, which is ready to drink, should be stored in a cool place.
