Oven dryers, which are generally made of two parts, produce hot gases by an oven or stove in the lower part, and the fruit and vegetables to be dried are in the upper part. The drying process takes place by circulating hot gases around this section. Thus, the dust is dried at low temperatures and for long hours without being exposed to the damage and larvae of the soil and living things. Of course, the time, labor and product costs of this drying method are more laborious than other drying methods. Therefore, product prices may be slightly higher than other manufacturers.

The advantages of drying can be listed as follows.
• The product can be stored for a longer time. Less energy is consumed when storing. It can be stored for a long time at room temperature.
• Products are more easily accessible. It is possible to reach and consume the taste of the season in every season.
• The product can be carried more easily, we can always have it with us in the office or on the road.
• It is more suitable for use as an intermediate product. Different products can be obtained by processing.
• Those who cannot consume fresh fruit for health reasons can also consume it.
• The nutritional value of the fruits is preserved at the rate of 90-95%.
• It protects the body against free radicals with high antioxidant potentials.
As for the disadvantages;
• Vitamin C is greatly reduced after drying.
• If correct and careful drying is not done, aflatoxin formation can be observed.
• Sugar and additives added while drying fruits pave the way for weight gain, increased sugar, and obesity-related diseases.
• Storage in air-permeable packages leads to rapid deterioration of dried fruits.
